Mini Peach Cobbler

My local grocery store has some great Arkansas peaches right now, and I took full advantage of it. I made a simple Mini Peach Cobbler that took no time at all. I created this recipe for two, so you will need to multiply it for a larger group. I love the combined flavor of peaches, brown sugar, butter and cinnamon. It’s one of my favorite summer flavors. Go get some Arkansas-grown peaches, and try out this Mini Peach Cobbler on your family.

Ingredients

  • 3 peaches, peeled and sliced
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1 tablespoon butter
  • 4 ounces crescent roll dough

Instructions

  1. Grease two ramekins with butter or oil. Preheat oven to 350 degrees. Combine peaches, sugar, cinnamon and butter in a saucepan over medium heat.
  2. Gently stir the peaches occasionally. Cook for 15 minutes or until the peaches are almost tender. They will continue cooking in the oven, so you don’t want them to be too tender going into the ramekins.
  3. Split the contents of the saucepan into the two ramekins and top with crescent dough.
  4. If using half of a can of normal crescent rolls, use two triangles per ramekin. Seal any seams between the triangles and seal the edges around the ramekin.
  5. Slice a small X in the middle with your knife. Bake for 8 to 12 minutes or until tops are golden brown. Serve immediately.
